Bean, Tomato And Corn Tortillas

Tomato with corn tortillas

1 x 400g can white beans, rinsed and drained

1 red onion, chopped

1 x 210 g can corn, or 1 corn cob, kernels removed

1 red capsicum, chopped 4 tomatoes, chopped

2 Tbsp chopped basil

2 Tbsp red wine vinegar 8 tortillas

1/2 cup liter sour cream 200g salad leaves

1. In a large bowl combine beans, onion, corn, capsicum, tomatoes and basil. Add red wine vinegar and stir to combine.
2. Heat tortillas as per manufacturer’s instructions.
3. Spread each tortilla with a tablespoon of sour cream and top with bean mixture and salad leaves, wrap up to serve.

HOW TO MAKE:

Chicken And Mushroom Risotto

1.5 litres chicken stock

2 small chicken breasts

Cooking spray

1 onion, diced

1 clove garlic, crushed

100g button mushrooms, sliced

1  cup risotto rice Parmesan cheese to serve

2 Tbsp chopped parsley
